Sometimes you have to cook a meaty dish for the non-vegetarians in your life. If you've never heard of Skyline Chili before, you are in for a treat. This incredibly tasty chili dish is slow cooked with aromatic spices - including cinnamon and chocolate.
Eggplant is in season from August through October in Ontario, Canada. It's actually a type of berry that adds a juicy smooth texture to meatless dishes - especially in Italian recipes. Although I've tried it breaded and fried, I prefer to bake or cook it in a sauce.
